New research from the University of Southampton, UK, published in the Journal of Clinical Pathology, has concluded that honey curbs the activity and growth of bacterial biofilms and reduces the possibility of their adherence to any surface, including plastic.
This study, reported in an article in Science Daily, entitled “Manuka honey curbs activity, growth of bacteria even at low dilutions,” points out the various possibilities for the use of honey in patients with medical devices, such as urinary catheters that are subject to a high risk of infection.
In order to test whether honey could really help clean these tubes, the scientists placed two types of bacteria (Escherichia coli’ and ‘Proteus mirabilis) inside the tubes and diluted the honey in water using different concentrations to obtain greater or lesser strength. As a result, they found that no matter how strong the honey was or how long the tube was immersed, it did its job and reduced the presence of the bacteria in the catheter tubes.

Ligustica worker bees love the nectar of the South Sea myrtle, which incidentally is a distant relative of the Australian tea tree. Busy bee colony workers collect Manuka nectar to process into honey in the hive and fill it into honeycombs. New Zealand beekeepers extract the Manuka honey from the comb using the cold centrifuge process. This is important because if heated, the natural ingredients of the remarkable bee product would be lost. The golden syrup has a strong, tangy flavor, which is another reason it differs from the types of honey we harvest. But delicious honey is not just a health food. It can do much more …
The Maori, the indigenous people of New Zealand, have known about the healing properties of the Manuka plant for centuries. They use natural products made from the essential oils of the medicinal plant and honey for wound care. But also remedies for colds, gastrointestinal complaints and infections are derived from this plant. For this, the Maori process the bark and leaves of Manuka trees and shrubs.
Manuka honey where it comes from
If you have purchased the honey naturally, it most likely already comes in such a container. But if, on the other hand, you have the honey stored in a plastic jar, you will not be able to preserve it in good conditions since the plastic is modified over time and may even release some of its components.
Look for a place at room temperature. Do not put it near heat sources, but do not put it in the refrigerator either. The room temperature of a kitchen or pantry will be perfect for preserving it. The ideal temperature is between 10 and 20 degrees.
If you have a considerable amount of honey and you are afraid it will spoil, freezing it may be a good option. It is possible to freeze it without losing its properties, but keep in mind that honey tends to expand when it is at a very low temperature, so avoid overfilling the jar.
In short, the best thing to do is to keep the honey in a hermetically sealed glass jar. Keep it at room temperature and in a dark place so that it retains its color and flavor.

Ideally, store honey at room temperature and away from sunlight, in tightly sealed containers, between 18 and 27 degrees C. Below 18 degrees, crystallization occurs much faster. Never store it in the refrigerator because it will crystallize even more.
Crystallized honey can be consumed without heating it to return it to a liquid state. If you prefer it more liquid, we recommend heating it to a temperature between 35º and 40º. Exceeding 40 degrees it can lose many of its properties.
